The fertile land around Mount Vesuvius is the production area of the San Marzano DOP tomato. This extremely delicate tomato maintains its flavour for a long time, even after storage, and must be handled with care.
The fruit is harvested between July 15th and October 15th and must be done exclusively by hand, in staggered fashion, once they reach full ripeness, and occurs in several batches.
