250g semolina flour
Place the semolina flour into a stand mixer bowl fitted with the dough hook attachment.
Bring water and salt to boil, and immediately pour into the semolina flour.
Start the stand mixer, and mix on medium speed for 10 full minutes.
Remove dough from the mixing bowl, and knead it gently for 4 minutes.
Wrap dough tightly in saran wrap and store in the fridge for up to 3 days.
