Relishing its favoured status since the 19th century, meat-forward bolognese has changed very little since its first documented appearance in 1830. More stew than sauce, a ragù relies on browned meat, soffrito, and a little tomato, smoothed to a velvety texture with milk or cream. Serve our house-made version with your favourite pasta.
