Pomodoro Sauce – Serves 4

Bright and punchy, our house-made pomodoro sauce has a base of hand-crushed Italian tomato spiked with cloves or garlic and whole peppers, then mellowed out with a hard, fast heat. Toss with fresh pasta, top polenta, or spoon over eggplant parmesan.

Ingredients Whole garlic clover, olive oil, onion, peperoncino, basil, canned tomato.

Cook your fresh or freshly frozen pasta in just a few simple steps.
First, simply bring a large pot of salted water to a boil over medium to high heat. Be sure to add a generous amount of salt as this will help to season the pasta and add flavour. 

Once the water has reached a rolling boil, gently drop the fresh pasta into the pot.

Gently stir the pasta right away to ensure it doesn’t stick together.

Your cooking time will depend on the thickness of your pasta but in general it will take between 2 and 4 minutes to cook all the way through. When the pasta is done, remove it from the boiling water and serve with your favourite sauce.
